As little as possible. Depends on the section. Look up the relevant mean section ranges and generally top & tail the EQ around that. Depends how much of the ambient noises you need to tame or keep.
Recorded in a good room fairly easy. Bad room, pretty difficult. Midi library strings should be pretty much done except for your own sound preferences be they smooth or extreme mangling.
