Bounce function is not mixdown

Could someone elaborate on the intended way of using the BOUNCE function. I have always used mixdown but realize bounce is probably much smoother a lot of times.

Its intended use is just as mentioned in the manual.

A typical application for bouncing is to consolidate edits of all kinds to a new continuous file. Crossfades, fades, VariAudio edits, warp edits, pitching via infoline, offline processes and volume envelopes are included.

Plugins and channel level are not, that function is called ‘bounce in place’ in other DAWs and a long time feature request for Cubase.
